500 g (18 oz) apricots
1 cup (200 g) sugar
1 cup (250 ml) whipping cream
1 lemon
4 tea spoons lavender flowers

Apricot-Lavender Ice Cream
Boil 10 cl (less then 1/2 cup) water, and add the lavender flower. Let it steep for 10 minutes, then strain and pour this lavender tea in a blender.
Juice the lemon and add the juice in the blender. Add the cleaned apricots and the sugar. Blend until smooth. Pour the cream in a bowl, and whip with a hand mixer until thick. Mix in the apricot puree, then pour in the ice-cream maker, and voila!
This recipes works best with fresh and ripe apricots; the apricot flavour mixes very well with the lavender flavour. If your apricots are a little tart, add a little more sugar.
