Jean-Paul Hevin makes some of the very best chocolates in Paris. Over 30 different traditional and creative varieties, most of them ganaches (vanilla, earl grey tea, coffee, caramel, raspberry, lemon or our favourite, the fantastic "3 honey" ganache) or pralines (very smooth walnut or hazelnut and cocoa paste). All chocolates are dipped, making the chocolate layer around the center very thin. The centers are exceptionally smooth and combine a powerful chocolate taste with a very subtle flavour. On the more unusual side, Jean-Paul Hevin makes some cheese chocolates, to be eaten before a meal. A large selection of very high-end pastries is also available, many of them being of course chocolate-based, as well as many different kinds of excellent chocolate macarons.
